You may be bored with summer's foods by this time of year. Something heavier may be more to your liking. The first frost may be at any time now. Let's look at a few recipes for October.

Great Homemade Chunky Meatloaf
 
What to put into your meatloaf:
1 Stalk of celery cut into half-inch pieces
1 Pound ground chuck steak
1/2 Pound ground pork
1/2 Cup bell pepper cut into half-inch pieces
2 Eggs, beaten
1/2 Cup onion cut into quarter-inch pieces
1 Tablespoon Worcestershire sauce
1/2 Cup tomato ketchup

Mix all of the ingredients well. Salt and pepper to the taste that your family likes. Place all of this into a roasting pan, top with more tomato ketchup and place in a preheated oven at 350 degrees F for one hour. It is often desirable to drain off any excess oils from the meats as the meatloaf cooks.

Potato Pancakes
 
Why throw away leftover mashed potatoes when a meal is finished. If there two cupfuls of potatoes left, make potato pancakes. IT'S AS EASY AS CAN BE!!

Warm or cold, leftover mashed potatoes can provide a tasty light meal when made into pancakes. You should have two cupfuls or more mashed potatoes left over. Chop a little onion and mix it into the potatoes. Then, make patties, much like hamburger patties.

Dip the patties into salted flour and fry in oil until golden brown. They are very satisfying for an afternoon snack or a light meal. Have applesauce or peaches as a side. You do not even need meat with this little tide-me-over meal.

A way to use leftovers.

Candy Apples on a Stick

The basic elements needed to make candied apples:
8 Granny Smith apples (the green ones)
1 Pound of caramels (You must unwrap them.)
A couple tablespoons of water.
Whatever fancy sprinkles, nuts or chocolate for toppings.
Wooden sticks to be handles for the apples.

HOW TO DO IT:
Be sure to wash the apples thoroughly to remove any wax. Slowly melt the unwrapped caramels and 2 tablespoons of water. When caramel is melted, hold the apple by the wooden stick you forced into the stem area of the apple, and cover the apple with caramel. You may need to use a spoon to help coat the apple. Place the apple on buttered aluminum foil for a half hour to set. Sprinkle whatever toppings you want on the apple.
