This is probably THE month for food, especially in the USA. Thanksgiving Day is the eatingest day of the year. It need not only be turkey, dressing, cranberries that nobody really likes, and pumpkin pie. Check out these three easy recipes and use them any time of the year.

Three Bean Salad
 
This is an easy recipe and uses FRESH green beans if you have them. Ingredients needed:
1 pound fresh green beans
1 can (1 1/2 cups) red kidney beans(drained)
1 can (1 1/2 cups) garbanzo beans (drained)
1 small red onion or sweet white onion
1/2 cup of your favorite vinegar
1/2 cup salad oil
Salt and pepper to taste.

Cut the green beans into 1 inch lengths. Steam the fresh beans and allow them to cool. If using canned beans, no steaming is needed. Chop the small onion. Mix the oil, vinegar, salt & pepper well and pour over the mixed beans and chopped onion. Stir well to get all beans coated. Cover and refrigerate overnight. You may decide to add a chopped boiled egg or use other types of beans such as limas or yellow wax beans.

Fried Garlic Rice
 
This is such an easy dish, and everyone loves it.

Steam rice in a rice cooker or saucepan. Plan on 3/4 cup of raw rice per serving. It increases in volume when steamed. I prefer Thai Jasmine rice, but even a cheaper type will work well for garlic rice.

While rice is cooking, chop up 2 garlic cloves for each serving you planned for. Cut the ends off and peel off the dry skin. Then, chop into pieces about 1/8 inch across.

Saute the garlic in a minimal amount of oil until lightly brown in color. Let the steamed rice set for 3 minutes or longer before adding to the garlic in the skillet. Salt to taste and fry for a minute or two, turning the mixture often.

You can add other items for variety if you prefer, such as egg or snow peas or carrot slivers.

Cranberry Bread

To make a bread with eight servings, you will need:
1 Cup sugar
2 Cups flour
1 1/2 Teaspoons baking powder
1 Teaspoon salt
1 Beaten egg
3/4 Cup melted butter
1 Teaspoon orange peel
3/4 Cup cranberry juice
1 1/2 Cups cranberries (pulped)
1 1/2 Cups raisins

Preheat the oven to 350 F degrees. Grease a loaf pan. Then, mix all the ingredients. The mixture will be lumpy. Pout into the loaf pan and bake for one hour and fifteen minutes.
