Summer seems to be getting old now, too much heat and humidity. Grass and weeds along the road are dying. Mosquitoes are among the insect pests. How about some good eats to perk up this month?

Cool Summer Fruit Salad
 
Ingredients needed:
1 13 Ounce can of crushed pineapple (drained)
1 8 or 9 Ounce tub of Kool Whip or similar product
1 Package of Vanilla pudding mix (the kind you must cook)
1 Package of Tapioca pudding mix (the kind you must cook)
1 Package of pineapple-orange Jello mix
2 Cups of water

How to Make it:
Place the two pudding mixes and the Jello mix into a saucepan with the two cups of water. Heat until the puddings begin to thicken. Pour this hot mixture into a large serving bowl to cool. When it is lukewarm, add the crushed pineapple and Kool Whip and mix well. Refrigerate overnight. You WILL make this cool treat often in the summer.

Alaskan Halibut in Foil
 
A low-fat fish recipe to get you out of the kitchen quickly.

You will need:

4 Halibut fillet of four to six ounces each
1 1/2 Cups of Julienne-cut veggies such as zucchini squash, cauliflower, carrots and/or broccoli.
2 Tablespoons of rice vinegar
2 Tablespoons of freshly grated ginger root
2 Tablespoons of cooking oil
4 Pieces of aluminum foil around 18 inches square

Simply preheat an oven to 450 degrees F. Place one fish fillet in the center of each square of foil. Put the vegetables on top of the fish. Combine the oil, ginger and vinegar in a small bowl and pour the mixture over the fish and veggies. Seal the foil packets around each fish/vegetable set, leaving some room for the air to circulate around the food. Bake for 15 to 18 minutes on a cookie sheet.

Hush Puppies

What it takes to make Hush Puppies:

1 Egg
1 Finely chopped small onion
1 Cup corn meal
1 Cup self-rising flour
1/4 to 1/2 Teaspoon baking soda
1 1/2 Cups buttermilk (regular milk will do, actually)
1/2 Teaspoon salt
Enough oil to deep fry the puppies

Use a sifter to combine the flour, corn meal and salt and soda. Add the buttermilk and egg and mix well by hand until the mixture will hold a ball shape. Add onion and mix again. Make balls around an inch or inch and a half across and drop into VERY HOT oil. Turn them over to brown all of the outside evenly. Drain for a short time on paper towels to remove some of the excess oil.
