A low-fat fish recipe to get you out of the kitchen quickly.
You will need:
4 Halibut fillet of four to six ounces each
1 1/2 Cups of Julienne-cut veggies such as zucchini squash, cauliflower, carrots and/or broccoli.
2 Tablespoons of rice vinegar
2 Tablespoons of freshly grated ginger root
2 Tablespoons of cooking oil
4 Pieces of aluminum foil around 18 inches square
Simply preheat an oven to 450 degrees F. Place one fish fillet in the center of each square of foil. Put the vegetables
on top of the fish. Combine the oil, ginger and vinegar in a small bowl and pour the mixture over the fish and veggies. Seal
the foil packets around each fish/vegetable set, leaving some room for the air to circulate around the food. Bake for 15 to
18 minutes on a cookie sheet.
