Labor Day follows the beginning of another school year. Are you relieved to get the kids back to school? Now you can have time for yourself (and for some new cooking ideas).

TUNA PATTIES--So easy to make, and everyone loves them.



Add one egg to one can (184 gram)of chunk light tuna in water. (Of course, drain the water off before adding the tuna to the egg.) Add a half teaspoon of thyme and salt it to taste. Break up one slice of bread into small pieces and add to the tuna-egg mixture. Stir well and let it set for 15 minutes so the bread is thoroughly soaked.



In a hot skillet with 1/4 cup of oil, place the patties that you form from the mixture. I usually get four patties to the recipe. Double the recipe for more patties. Fry them until they are golden brown, turning them a few times so both sides are evenly done. USE A LID ON THE SKILLET as these little fishies pop oil when they fry.



Serve with your favorite garnish. Some people prefer to serve them in hamburger buns.

Easy Brocolli with Cheese

This can be called "Broccoli for Dummies" since it is foolproof, and oh-so-delicious.

Place a 10 ounce package frozen broccoli florets into a steamer with an inch of water. Cover and cook until tender but not yet mushy. This should require three to six minutes of cooking. Transfer the florets into a microwave safe bowl. Discard the water in which you cooked them.

Pour three tablespoons of melted butter over the broccoli. At this time, you can add salt and pepper if you wish. Sprinkle a half cup of shredded Cheddar cheese over the buttered florets. Place in your microwave oven for one minute on "high" power. Serve and wait for the applause from your dinner guests.

PEACH COBBLER

Melt one stick of butter in a deep glass bowl that is oven safe. Add one cup of sugar and 3/4 cups of self-rising flour to the hot butter. Gradually add one cup of milk to the flour/sugar mixture and mix well. With the batter mixture in the bottom of the bowl, add a large can of sliced peaches. Some sprinkles of cinnamon on top finishes the job.

Place the bowl in a pre-heated oven at 350 F for around 45 minutes.
